Why We Choose Highland Grass Fed Beef
Here at Crescent Hill Farm & Ranch, we choose Scottish Highland Cows for a multitude of reasons! Highland cattle possess a thick, double-layered coat of hair for insulation; they do not need to develop the thick layer of subcutaneous backfat typical of other commercial cattle breeds.
When raised on an exclusive pasture diet, this genetic trait results in a distinct, health-promoting nutritional profile featuring significantly lower fat, reduced cholesterol, and higher protein and iron.
Optimized Omega Ratios
Grain-fed systems can skew the inflammatory Omega-6 to Omega-3 ratio as high as 25:1. In contrast, grass-finished beef maintains an optimal, anti-inflammatory ratio of roughly 1.5:1, mirroring wild game.
Phytochemicals & Vitamins
Pasture grazing elevates precursors for antioxidant vitamins, yielding up to 3 times more vitamin A (beta-carotene) and 4 times more vitamin E than grain-finished counterparts. This often gives the raw fat a characteristic yellowish tint.
Grass-fed beef is also a primary source of Conjugated Linoleic Acid (CLA), a fatty acid linked in metabolic research to cardiovascular support and reduced fat accumulation. CLA has also been studied for its potential cancer-fighting properties.
Superior Tenderness
Independent rapid slice shear force testing evaluated by the University of Glasgow found pure Highland beef scored significantly better than commercial benchmarks, grading out as almost 23% more tender than standard commercial beef.
There is no comparison in the commercial beef world when it comes to Grass Fed Highland beef, as studies continue to show incredible benefits both for consumption and for regenerative farming and sustainability practices.
Sustainability & Regenerative Farming
A study published in Agriculture, Ecosystems & Environment evaluated the impact of cattle breeds on semi-natural grasslands. It discovered that Highland cattle have a direct, positive influence on plant species richness compared to production-oriented breeds.
Because Highlands are excellent browsers that readily eat woody brush and weeds, they reduce invasive canopy cover and promote diverse ecosystem services.
